Ingredients

For the chicken marinade

  • 500g chicken (boneless, cut into pieces)
  • 1/2 cup yogurt
  • 1 tbsp ginger-garlic paste
  • 1 tbsp lemon juice
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp butter
  • 1 tbsp oil
  • 1 large onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 2 medium tomatoes, pureed (or 1/2 cup canned tomato puree)
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/4 cup heavy cream
  • Salt to taste

For butter chicken sauce:

  • 2 tbsp butter
  • 1 tbsp oil
  • 1 large onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 2 medium tomatoes, pureed (or 1/2 cup canned tomato puree)
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/4 cup heavy cream
  • Salt to taste
  • Fresh cilantro for garnish
  • Kasuri methi (dried fenugreek leaves) – optional but adds great flavor

Instructions:

Marinate the Chicken:

  • In a bowl, mix the chicken pieces with yogurt, ginger-garlic paste, lemon juice, red chili powder, turmeric, garam masala, and salt. Let it marinate for at least 30 minutes (or up to 2 hours in the fridge).

2. Cook the Chicken:

  • Heat a bit of oil or butter in a pan. Add the marinated chicken and cook until browned and cooked through. Set it aside.

3. Make the Sauce:

  • In the same pan, melt the butter and add oil. Add chopped onions and sauté until golden brown.
  • Add ginger-garlic paste and sauté for another minute.
  • Add pureed tomatoes, red chili powder, garam masala, cumin, coriander powder, and salt. Stir and cook until the oil starts to separate from the mixture.
  • Add water (about 1/4 cup) to adjust the consistency if needed.

4. Combine Chicken with Sauce:

  • Add the cooked chicken pieces to the sauce and cook for 5-7 minutes, allowing the chicken to absorb the flavors.
  • Stir in the heavy cream and cook for another 3-5 minutes on low heat.
  • If you have kasuri methi, crush it and add to the dish at this stage.

5. Garnish and Serve:

  • Garnish with fresh cilantro and serve hot with naan or rice.
